Gelatin,20 grams serves 4 Egg whites,2 Sugar,60 grams Lime or Lemon,1/2 or 1 Water,150 ml approximately Method Put the rind and juice of lime sugar gelatine and water into a saucepan. Cover and bring to boil. Infuse for half an hour. Strain and cool. Whisk the whites stiffly in a large bowl. Add the cool lime mixture slowly whisking well. Whisk till it starts to set. Pour into a wet mould and turn out when set. Serve with custard sauce. Return to main list of recipies
