Spinach,225 grams Eggs,3 Cheese,70 grams Pepper,to taste Salt,to taste Method Wash and boil spinach till tender and all moisture has evaporated.Make into a puree. Add yolks of eggs and the grated cheese reserving a little for sprinkling on top. Beat the whites stiff fold into the mixture. Put into a souffle mould and sprinkle with remaining cheese and bake at 175c or 350F for 25-30 minutes. Return to main list of recipies
